Instructions

- In a small bowl, combine sugar and your preferred thickener (cornstarch, flour, or another alternative) to prevent clumping.
- Sprinkle the sugar-thickener mixture over the peaches and toss to coat evenly.
- Stir in lemon juice, vanilla extract, and cinnamon (if using).
- Transfer the mixture to a saucepan and cook over medium heat, stirring frequently, until the filling thickens (about 5–7 minutes).
- If needed, add more thickener mixed with a small amount of cold water to achieve desired consistency.
- Let the filling cool before using in a cobbler or refrigerate for later use.
Notes
- Adjust the amount of thickener based on the juiciness of the peaches.
